BBQ Pulled Jackfruit Sliders
Here’s everything you will need to make these delicious sliders :
BBQ JACKFRUIT:
Canned jackfruit in brine or water
Better than Bouillon Vegetable Base
Yellow onion
Garlic cloves
Olive oil for cooking
Smoky bbq seasoning
Smoked paprika
Garlic powder
Onion powder
Liquid smoke
Vegan-friendly Worcestershire sauce
BBQ sauce
COLESLAW:
Purple cabbage
Green cabbage
Carrots
Plant based mayo
Apple cider vinegar
Dijon mustard
Maple syrup
Salt and black pepper to taste
REMAINING INGREDIENTS:
Slider buns
Pickles

Ingredients:
BBQ JACKFRUIT
- 2 cans of jackfruit in brine or water
- 1 tsp Better than Bouillon Vegetable Base
- 1 yellow onion, sliced
- 5-6 large garlic cloves, minced
- Olive oil for cooking
- 1/2 tsp smoky BBQ seasoning
- 1/2 tsp smoked paprika
- 1 tbsp garlic powder
- 1 tbsp onion powder
- 1 tsp liquid smoke
- 2 tsp vegan-friendly Worcestershire sauce
- 2 cups BBQ sauce (divided)
COLESLAW
- 2 cups shredded purple cabbage
- 2 cups shredded green cabbage
- 1 cup shredded carrots
- 1/4 cup plant-based mayo
- 2-3 tsp apple cider vinegar
- 1 tsp Dijon mustard
- 2 tsp maple syrup
- Salt and black pepper to taste
REMAINING INGREDIENTS
- Slider buns, toasted
- Pickles (optional)
Instructions:
Prepare the Coleslaw
- In a large bowl, mix plant-based mayo, apple cider vinegar, Dijon mustard, maple syrup, salt, and black pepper. Add shredded green cabbage, purple cabbage, and shredded carrots. Mix well.
- Cover and refrigerate for at least 1 hour, allowing flavors to meld.
Prepare and Cook the BBQ Jackfruit
- Drain and rinse the canned jackfruit. Optionally, remove seeds and solid part of the jackfruit. Squeeze out excess water.
- In a large pot, bring water to boil. Add jackfruit, sliced onion, minced garlic, and Better than Bouillon. Simmer over medium heat for 20 minutes.
- Preheat oven to 375°F (190°C).
- Remove jackfruit from liquid using a slotted spoon and drain in a strainer.
- Heat olive oil in a large skillet over medium heat. Add jackfruit and cook for 1-2 minutes.
- Add smoky BBQ seasoning, smoked paprika, garlic powder, onion powder, liquid smoke, vegan-friendly Worcestershire sauce, and half of the BBQ sauce to the skillet. Cook for 5-7 minutes until jackfruit is coated and slightly caramelized.
- Transfer jackfruit to a baking sheet lined with parchment paper or brushed with oil. Bake for 20-30 minutes until slightly crispy.
- Remove from oven and drizzle with additional BBQ sauce if desired.
Assemble the sliders
- Spread remaining BBQ sauce on toasted slider buns.
- Layer BBQ jackfruit and coleslaw on each bun.
- Optionally, add pickles on top.
- Serve sliders immediately and enjoy!
