Creamy Vegan Spinach & Artichoke Dip
This spinach dip is so creamy, delicious and 100% vegan! Add this to the menu the next time you’re hosting friends or family. This is also perfect for game day, a small party, or even to bring to a work potluck
Ingredients:
- 3 tbsp dairy-free butter
- 1/2 yellow onion, diced
- 5 garlic cloves, minced
- 2 - 2 1/2 cups frozen chopped spinach
- 8 oz dairy-free cream cheese
- 1/2 cup dairy-free sour cream
- 1 cup vegan parmesan cheese
- 8 oz vegan mozzarella cheese
- 14 oz canned artichoke, drained, rinsed, and chopped
- 1/4 - 1/3 cup original, unsweetened, dairy-free milk
- 2 tsp garlic powder
- 1 tsp salt (or to taste)
- 1/2 tsp black pepper (or to taste)
Instructions:
- Preheat your oven to 400°F (200°C) if you plan to bake the dip.
- In a large skillet or saucepan (oven-friendly if you plan to bake the dip), melt the dairy-free butter over medium heat. Add the diced onion to the pan and cook for 3-4 minutes until it becomes translucent. Add the minced garlic and cook for another 1-2 minutes until fragrant.
- Add the frozen spinach to the pan. Cook for 3-5 minutes or until the spinach has thawed and most of the liquid as cooked down. Stir occasionally.
- Reduce the heat to low. Add the dairy-free cream cheese and sour cream. Stir until they're melted and well combined with the spinach mixture.
- Gradually add the vegan parmesan and mozzarella cheeses, stirring constantly until melted and incorporated.
- Add the drained, rinsed, and chopped artichokes to the pan and stir to combine.
- Pour in 1/4 cup of plant-based milk and stir. If the dip seems too thick, add the remaining milk gradually until you reach your desired consistency.
- Add the garlic powder, salt, and black pepper. Stir well and taste. Adjust seasonings if needed.
- Cook for an additional 5 minutes on low heat, stirring occasionally, to allow the flavors to meld together.
- At this point, you can serve the dip as is, or choose to bake and broil it for a golden top
- If baking - Transfer the dip to an oven-safe dish if you're not already using one. Smooth the top with a spatula. Bake in the preheated oven at 400°F (200°C) for 15-20 minutes until the dip is heated through and bubbling around the edges.
- Optional: Ffor a golden top, switch your oven to broil and broil the dip for 2-3 minutes, watching carefully to prevent burning.
- Let it cool for 5-10 minutes before serving.
- Enjoy with bread, chips or crackers
